How locals do it
Shanghai's "dry-style" shengjian bao house — no aspic in the filling, so less soup but a deeply crisp bottom. The local order is 「二两鲜肉生煎」 (100g pork buns) with a bowl of curry beef soup.
Don't get this wrong
This is NOT the soup-filled kind — that's Yang's down the road. Tourists leave one-star reviews for the "missing soup", but a crisp bottom and minimal broth is the old-Shanghai style this place has made since 1932.
